Big Batch Cooking... What took me so long?!


Honestly! What the hell!?

I have spent the last few months looking up all these big batch recipes online and wanting to join up on some cooking groups and such... But I was going about it all wrong!

Early last week, I decided to do a triple batch of the old standby tuna casserole recipe. Yes, those are peas in there, old standby recipe thank you to my dad. After no extra energy wasted I had three dinners in the time it took to do one. I popped one in the fridge for later and the other two in the freezer. 

Last night was the moment of truth. I took out one the freezer meals to thaw in the fridge overnight, and had pretty much the whole afternoon naptime to myself. Tidy up, vacuum, dishes, and finally sit down to finish up some crocheting. I'm such a nana, I know. 

Dinner time came, put the thawed meal into the oven, made a quick salad and that was it. Brilliant! Too easy!

I know a lot of people do this and have been doing this for ages, but it was such a lovely break for me to have. And I was all concerned about trying all these new recipes, when really, it was taking something I know how to make in my sleep and just making it bigger, doubled or triple, maybe even quadrupled! Wooooooo!

I have a strange suspicion that I made start secretly saving for a deep freezer in my piggy bank... Just saying...

Strange food requests and so many new words!

The boys are getting more and more vocal everyday.

"Please"

"Thank you"

"Curry puff"

"Proper fluffy please" (Hendrik)

And I ask "What veggie would you like for lunch?" Willem says, "Lettuce please."

19 months. Crazy.

But I am shocked and amazed that somehow they have taken to eating salad! And requesting it on a regular basis. It's probably just a phase and they will hate it next week. But still pretty cool...

Vegan Corn Chowder - Meatless Monday

This weather! Rain, rain and more rain! If this is the start to winter, I'm not sure I'm looking forward to it anymore. Everything is damp, laundry is taking forever to dry, everything smells musty. At least it's not cold... Yet!
Last week, I made this super hearty soup with a heap of leftover corn on the cob that I completely spaced serving at our latest family cook-off. Yeah. It happens. Nobody went home hungry. The corn was not missed. So score for us!



Vegan Corn Chowder

Prep time: 15 minutes
Cook time: 30 minutes
Total time: 45 minutes
Yield: 4-6 servings

Ingredients :
  • 1 onion, diced
  • 4 cloves garlic, crushed
  • 1-2 tbsp olive oil
  • 2 celery stalks, diced
  • 1 potato, peeled and diced
  • 1 kumara, peeled and diced
  • 5 corn cobs, already cooked, kernels removed
  • 1 litre vegetable stock
  • freshly ground pepper
Method :
  1. Saute the onion and garlic in oil for 5 minutes in a large saucepan.
  2. Add the celery, carrots, potato and kumara and saute for another 5 minutes.
  3. Add the corn kernels and stock to the veggies. Bring to a boil and simmer for about 20 minutes.
  4. Puree with a soup wand or in a blender.
  5. Serve up with some freshly ground pepper and done!

I served this with some roasted cabbage and it was amazingly filling! All three boys devoured it! And the leftovers were popped into the freezer.

Chicken Quinoa Enchiladas

Someone in our family, who shall remain anonymous, isn't too keen on quinoa. And ok, I can see why... it does have a different flavour and the texture needs a little getting used to, but the rest of us don't have a problem with it. So, when I made my last batch of chicken enchiladas, I wanted to try a little experiment...

They look like normal enchiladas, yeah?
And I think it worked! He ate it! And liked it! I thought it was hard to get the boys to eat some days, but getting that man to eat quinoa... Woooooo! I never thought it would happen!

I love pikelets! You can add pretty much anything to them. Corn, bacon, apples, bananas, savoury, sweet, topped with honey, jam, or just plain!

Leftover Makeover - Risotto Balls

Right. Mind back in the right.... Leftovers.

We've been lucky the boys are ok with leftovers, but I feel bad making them eat things for lunch they may have had for dinner the night before. Not to mention, I get bored of eating the same things as well.

One of the MANY dishes that Jacob is amazing at, is his risotto. Amazing. Did I mention amazing? He's got the technique. And the free for all of the garden and the fridge. Maybe.... MAYBE... Someday, he'll write his own risotto post/recipe. Maybe.

Anywho, to get the boys to finish off this super tasty dish...

Protein, veggie style!

I saw this recently somewhere on Facebook, and thought it was pretty brilliant. I do try to use most of these as often as I can, but didn't realise that many of them were good sources of protein! I'd be keen to try out chia and hemp seeds.

If anyone has some yummy recipes for them they would like to share, please do!

Kid friendly Curry? Yes! Score!

A couple of years ago now, I worked as a nanny and looked after two lovely little hobbits! Cooking for them was pretty easy with the exception of the curry dilemma! They weren't really keen on anything curry. Not even butter chicken! It was something that I was hoping wouldn't happen with the boys. As soon as they were old enough, it's been all about variety.

A recipe for a veggie korma was sent to my inbox from the Vegetarian Times. I made it with really no intention of giving it to the boys, but when Jacob and I had it for dinner, I thought the boys might actually like it. The next day, I warmed up the leftovers, curious to what would happen, ready in the wings were a couple sandwiches, just in case.

Let's just say, I had the sandwiches for lunch, the boys devoured the korma! It was a triumph for me! I am amazed everyday at what they enjoy eating. Things that are basic and bland seem to get thrown on the floor lately while the garlicky and spicy get eaten straight away. Hendrik will lick Vegemite off of crackers and leave the crackers.

Anywho, this reasonably mild korma still has incredible flavour and Jacob who is renowned for his hot sauce consumption, didn't use any. It's loved by everyone in our clan!

Crispy Tofu Teriyaki - Meatless Monday and Naptime Cooking!


A couple years ago, I came across this recipe from the lovely Pip @ Meet Me at Mike's. The first time I made it, it was love. It's still in regular rotation on the menu planner, but has gone through so many incarnations.

This is our latest version! With crispy tofu and udon noodles! Super yummy! As per usual, making a stir fry in our house means whatever veggies are in the fridge and garden are fair game! And of course, a lot of the recipe can be done when the kiddos are napping. Chop the veggies, cook the tofu, whisk up the sauce.. This makes actually cooking dinner with two little men under your feet quite a bit easier.

First things first. Crispy tofu. I've been trying to get this right for years! When I was vegan, back in my early 20's, my best friend and I would have this amazing crispy tofu and broccoli take away from our favourite Chinese restaurant at least once a week. The tofu was the perfect amount of crispy and still soft in the middle... *droooool* anyway! this is the closest I've got to that! and it's only taken 15 years!

So anyway... To make this lovely (boy-loved) dish...

Merry Merry Christmas one and all!

What a lovely holiday we have had here in Wellington! Christmas Eve day was spent waiting for Jacob to finish a short work day, listening to christmas songs, and reading The Night Before Christmas!

Christmas Eve was pretty icky weather, rainy most of the day, gusting winds, but Jacob being a brave cook, headed out to the BBQ for some tandoori chicken and an oven roasted terakihi for the fam. Odd combo, but so yummy!

Our first whole fish! Love it! And I think we'll be seeing more of them! The rest of the evening was getting ready for a lovely Christmas... Washing hand-me-down wooden blocks, decorating chalkboard toy boxes that Jacob built, drinking wine and snacking on mince pies.

So, the next morning...

Then off to Auntie Lisa's for an amazing day of feasting, beautiful weather, and warm family fuzzies...

Naptime Cooking - Wild Pork Enchiladas

Some days, being a Stay-at-home-Mum is not much different than being a project mananger. You plan your day based on what available time and resources you have. Somedays it's the only way to get through it!

I'll admit it, I love it when the boys are napping! Ahhhh quiet... Ahh the serenity... And then about 5 minutes later, it's a mad rush for me to eat lunch, tidy up quickly and get dinner started, or at least some prep done. (Unless, of course, Jacob is keen to cook, which has been a lot lately! Thank you, dear!)

I have a handful of go-to recipes that I use. I tend to change it up here and there, but the basics remain the same. This is one of my favourites because of how flexible it is...

  • About 1 tsp (or to taste) of each of the following : Cumin, coriander, dried chilli flakes, thyme, oregano, salt and pepper
  • 1 can of tomatoes, chopped or whole, whatever is available
  • 1 small can of tomato paste
  • 2 cloves of garlic, finely chopped
  • 1 onion, finely chopped
  • 400 grams wild pork mince
  • 1 1/2 cups of grated cheese
  • 6 tortillas (store bought is totally cool. I struggle to make my own tortillas most weeks)

In a mortar and pestle, bash all together until mostly crushed and combined.

Put all the spices and the tomatoes into a pot, stir and simmer through. Once it starts to cook through a bit, add more spice if you like. I usually add a bit more chilli... We like it hot!

While the sauce is simmering, get the meat on!

For this instance, I used about 400g of wild pork mince. I usually use about 350g of chicken thigh cut into small bite sized bits, but you can use whatever you have available. For a vegetarian option, black or refried beans are awesome!

Cook the onions in a well oiled pan until they begin to soften. Add the mince and brown off. If the meat has too much grease, drain on a paper towel and pop back into the pan then add half of the sauce.

Let the flavours combine and then take off the heat.

At this point, I divide the meat in the pan into 6 even portions. Now fill up those tortillas. I add a little bit of cheese to each before I roll them up and pop them into the baking dish.

When all 6 are rolled and in the dish, cover with the remaining sauce and cover the rest of the cheese.


So now it's ready to go. When this goes in the fridge for later, there is that moment of pride, you know the one - oh thank goodness I accomplished something today moment...

Anyway, pop this in the oven for about 20-25 minutes at 180C. Let stand for a few minutes before dishing out, top with some avocado, sour cream, and jalapeƱos and dig in!
